Brunch?



YUM....tofu benedict with spinach over an english muffin. I love this benedict sauce, its from How It All Vegan.



We had some stuffed seitan cutlets with mashed potatoes the night before this, so I created some potato vegetable pankcakes to re-pair with the seitan and gravy!



HAHA...more tofu benedict with my tempeh bacon and some veggie home fries.



Super close-up of some tofu frittata. I'm going to be offering this for my holiday catering. Oh yeah, as well as a seitan roast and baked goods.
